Specialty Coffee - Golden Hour Sip
The varietal Yellow Bourbon has plenty to offer: it is sweet, delicate, and complex. First recorded in Pederneiras, São Paulo, in 1930, it is thought to be either a natural cross between Red and Yellow Bourbon or a mutation of the red variety. A sweet, syrupy body and medium acidity bring balance, while flavours of apple, yellow plum, pear, and peach add brightness. The finish is rich and caramel-like, reminiscent of dulce de leche.

Description
Specialty Coffee - Ukuku
This coffee originates from the green hills of Sul de Minas, Brazil. The region provides ideal conditions for coffee growing and produces some of the country’s finest beans. Locally known as Vertentes, it sits on the border of two major river basins: the Grande River (to the south) and the São Francisco River (to the northeast).
Here you’ll find Fazenda Samambaia, run by farmer Henrique Dias Cambraia. He credits the farm’s success to its unique location, careful management of the plantations, strict quality control, and most importantly, the dedication of the whole team. Henrique is committed not only to producing excellent coffee but also to farming in a way that is socially responsible and environmentally sustainable.
This lot is processed using the pulped natural method. The skin is removed within 24 hours of harvest, and the beans, still coated in a sticky layer of mucilage, are dried on patios for 10–15 days until they reach the ideal 11% moisture level.
Fazenda Samambaia’s commitment to quality has earned it many awards, including the prestigious Cup of Excellence.

Storage
Storage
Your beans’ greatest enemies are air, moisture, heat, and light.
Store in an air tight container in a dark, cool, dry place. A cabinet near the oven is often too warm, and so is a spot on the kitchen counter that gets strong afternoon sun.
To keep the great flavour, use within 1 month. The coffee will keep for up to 6 months but the flavour won't be as good. See best before date.
